I wanted to share one of my favorite sandwiches for National Sandwich Day today. This is a Lacto-Ovo-Vegetarian sandwich as it has mayonnaise, white cheese such as Swiss, provolone, or pepper jack, and cream cheese. It is perfect for having with soup or by itself. I love it with a glass of buttermilk.
Veggie Delight Sandwich
Ingredients:
- 2 Slices of Bread (seedy wheat or sourdough)
- Softened Cream Cheese
- Condiments (mayonnaise, Grey Poupon mustard, stone ground mustard, or horseradish sauce, or a combination)
- 2 Slices of Sliced White Cheese (Swiss, provolone, or pepper jack)
- Sprouts (aka micro-greens) (alfalfa sprouts, broccoli sprouts, clover sprouts, or radish sprouts, or a combination)
- Sliced Avocado
- Sliced Mushrooms (button, shiitake, or baby bella)
- Sliced Tomato
- Sliced Cucumber
Instructions:
- Spread cream cheese on one of the slices of bread and your choice of condiments on the other.
- Layer some sliced cucumber, sliced tomato, and cheese on the side with the condiments.
- Layer some sprouts sliced mushrooms, and sliced avocado on the side with the cream cheese.
- Put both sides of the bread together with the ingredients in the middle to make the sandwich.
- Cut the sandwich down the center or across to make two halves.
- Enjoy!
I could eat a sandwich for every meal. There are endless ways to make them, they are quick to prepare, and will usually be cheap to make.
